In order not to deprive the latter (and anyone paying attention to its line) of the little pleasures of life, such as that of enjoying a good chocolate cake, here is a delicious recipe based on avocado, and especially without eggs or butter !

A recipe for avocado-based chocolate cake:

Ingredients:

Cake:

- 200 g of flour T55
- 100 g cornstarch
- 40 g of black cocoa powder
- 30 g of sodium bicarbonate
- 10 g of baking powder
- 2 to 3 g of salt
- ¼ cup of olive oil
- 1 ripe avocado, to crush until a smooth texture
- 2 cups of water
- 2 tablespoons white vinegar
- 2 teaspoons of vanilla extract
- 40 g of stevia

Frosting:

- 2 ripe avocados, to crush until obtaining a smooth texture
- 20 g of stevia
- 40 g of black cocoa powder

Preparation:

First, oil two round cake molds (about 22 cm diameter) and preheat your oven to 180 ° C. Then, in a large container, mix the rice flour, cornstarch, yeast, baking soda and salt, and in another, carefully mix the olive oil, crushed avocado pulp, water, vinegar and vanilla, then once well incorporated, add stevia and mix again.

Add the second mixture to the first, then mix thoroughly to obtain a perfectly smooth texture. Then, divide the dough evenly on the two molds, then bake them. After 30 minutes of cooking, make sure the cakes are ready.

Remove them from the oven and let them cool in their molds for 15 minutes, then unmold them and let them cool completely. Meanwhile, prepare your frosting by mixing crushed avocados, stevia and cocoa until smooth and creamy.

Once your cakes are cold, spread half of your frosting on the first cake, then place the second cake on top and spread the rest of your chocolate cream over it.
