Scientists have explained this weight gain by the fact that aspartame produces an amino acid called phenylalanine. The latter is known for its inhibitory action of intestinal alkaline phosphatase, an enzyme that contributes to the prevention of the metabolic syndrome, responsible for the increased risk of type 2 diabetes, and several other dysfunctions.
