According to a recent study, only a quarter of people consume five fruits and vegetables a day. One of the most alarming findings is that eating enough fruits and vegetables daily is absolutely essential to the proper functioning of the human body. For all those who want a better diet but are always looking for healthy and tasty dishes, here is a recipe for zucchini fritters that will make you feel good with vegetables.

In addition to being much healthier than the overwhelming majority of those found in commerce, these donuts are perfect for taking away at work or for a picnic outside.

Ingredients

For the sauce:
- ½ cup finely chopped dill

Dill contains a good amount of potassium and the essential oil it contains has calming properties. It also has diuretic and antispasmodic virtues.

- 1 Avocado 
Avocado is an extraordinary fruit. Rich in good fats, in many vitamins and minerals, it is good for the heart, for the sight and for the digestion. It also makes the skin and hair more beautiful, improves healing and brings you energy.

- 1 lime
- 1 onion

The onion contains vitamin B9, essential for good brain function. In addition to fortifying bones, it also helps fight oxidative stress.

- 1 tablespoon of extra virgin olive oil
- salt pepper

For donuts:
- 1 big zucchini, or two small

Zucchini is a diuretic food that contains vitamins (A and C) and minerals such as iron, calcium, potassium or magnesium, as well as antioxidants. It is nutritious and will help your body fight inflammation.

- 1 garlic clove, finely chopped

Garlic is considered a superfood because it plays an important role in the fight against many diseases, including cancer.

- ¼ cup fresh basil

Basil is a powerful antioxidant and a good antibacterial. Rich in iron and vitamin K, it helps prevent certain conditions such as diabetes or cardiovascular disease.

- ¼ cup fresh oregano
- 1 tablespoon of organic lemon zest

Lemon peel has a detoxifying effect. In addition to allowing the elimination of toxic waste in the body, it also reduces gas and bloating.

- 2 organic eggs
- ¼ cup of flour
- ¼ teaspoon of onion powder
- salt pepper
- coconut oil
- optional: ½ cup finely chopped spinach or kale

Preparation

For the sauce:

- Mix avocado flesh with lemon juice, diced onion, olive oil, salt and pepper.

For donuts:

- Grate the zucchini with a medium grater and place it in a strainer, then mix with ½ teaspoon of salt and allow to drain for 10 minutes before spinning with a clean cloth.

- Place the zucchini (spinach / kale), egg, garlic, basil, oregano, lemon peel, onion powder, salt and pepper in a large bowl and mix well before slowly adding the flour to prevent lumps from forming.

- Pour 2 tablespoons of coconut oil in a pan and let heat before adding a tablespoon of this mixture.

- Cook donuts over low heat and on each side until golden brown, adding coconut oil if necessary.

- Place the donuts on a plate and serve with the sauce.

You can also bake them in a muffin tin.
