The samosas are back in force with this recipe based on ground beef that will warm us during this winter. Originally from northern India, samossa is healthy and can be made of pastry sheets filled with stuffings of all kinds, varying vegetables, cheese or meat.

Recipe of ground beef samosas, vermicelli and vegetables

Ingredients

For 22 samoss
  • 22 small brick sheets
  • 450 grams of ground beef, organic or grilled cauliflower finely chopped (for vegetarians)
  • 2 grated carrots,
  • 1 grated zucchini,
  • 1 onion, finely chopped,
  • 2 chopped garlic cloves
  • 200 grams of Chinese vermicelli
  • ½ teaspoon of salt
  • ½ teaspoon Pepper
  • 1 teaspoon of paprika
  • 1 teaspoon of turmeric,
  • 1 teaspoon of ginger powder,
  • ½ teaspoon of spices "Rass el hanout" (mix of oriental spices)
  • 1 teaspoon of Sriracha or harissa
  • 1 tablespoon parsley
  • 1 tablespoon olive oil, extra virgin
  • 20 grams of unsalted butter
Preparation
- In a large pot of boiled water, put the vermicelli and keep them in the container for 4 minutes until they become tender. Drain and rinse with cold water.

- In another container, put the minced meat and add it, salt, pepper, paprika, turmeric, ginger, "Rass el hanout", parsley, Sriracha. Mix until the spices are well incorporated into the meat.

- In a large saucepan, add the chopped onion and garlic to the olive oil until golden, then add the minced meat. Cook for 5 to 7 minutes until browned. Put the meat aside in another container.

- In the same saucepan, add the carrots and zucchini with butter and stir for 4 minutes until the vegetables are softened.

- Add the meat, vermicelli and let cool before stuffing the brik leaves.

- Line a baking dish with baking paper and put in the samosas. Heat the oven to 230 ° C and bake the samosas for 25 minutes, until they turn golden and crisp.
