Delicious Lasagna Recipe With Rolled Eggplant

Here is a delicious eggplant lasagna roll recipe that will nourish your body, and brighten up your winter!

When you hear the word "Lasagna", you immediately think of the pasta and all the rolls of fat that could be collected by consuming this dish very delicious but can be very heavy and caloric. However, by choosing the right ingredients, you can continue to indulge yourself, and eat your favorite dishes without endangering your health or gaining weight. The proof ? This recipe of lasagne rolls without dough but aubergines.

Lasagna Rolls with Eggplants:

Ready to go out of bed to prepare this eggplant recipe? Here are the ingredients you will need:

- 3 organic eggplants of preference
- ½ teaspoon of sea salt.
- 3 tablespoons of virgin and organic olive oil.
- 2 cups of tomatoes pureed.
- ½ cup of basil leaves.
- 3 teaspoons minced garlic.
- A cup of minced spinach.
- ½ cup of ricotta.
- ¼ cup grated parmesan cheese.
- ½ teaspoon ground pepper.
- 1 cup of diced mozzarella.

Preparation:

- Spread greaseproof paper on a baking sheet, put it in the oven, and heat the oven to 220 °.

- Cut your eggplant lengthwise to form long thin slices. (Not more than 6 mm thick), then season them with ¼ teaspoon of salt, and leave for 15 minutes.

- Dry your eggplants, and coat them with olive oil.

- Place them on the previously heated plate, and cook for 20 minutes. Your eggplant should take a golden color.

- In a large salad bowl, mix the tomato purée, ¼ cup basil, 2 teaspoons garlic, and ¼ teaspoon salt.

- Take a half cup of prepared mixture, and spread in a gratin dish (33x23cm).

- In a bowl, mix the previously dried spinach, ricotta, parmesan, pepper, and a teaspoon of garlic.

- Take the eggplants out of the oven and leave to cool for 15 minutes, then spread them with the cheese mixture and form small rolls.

- Place the eggplants in your gratin dish, and add the tomato puree.

- Put your dish in the oven, and cook for 40 to 45 minutes.

- Add the mozzarella, cook for another 2 minutes, then remove from the oven.

- Add the basil leaves, and serve.
