The state of California in the United States has put in place a list of chemicals that it considers to be a possible cause of cancer, and one of them, acrylamide, is created when roasting coffee beans.

Californian coffees may soon be forced to warn their customers of a possible cancer risk related to coffee consumption.

Coffee, a cause of cancer?
According to a 2014 review of scientific research on the relationship of this substance with a wide variety of cancers published in the Journal of Nutrition and Cancer, research on human exposure to acrylamide still needs future studies.

A study by the International Agency for Research on Cancer, a branch of the World Health Organization, found that the consumption of very hot beverages is potentially carcinogenic to humans due to esophageal burns, but without of relationship with acrylamide.

In a large study conducted by a team of scientists funded by the European Commission's Directorate-General for Consumer Health and the International Agency for Research on Cancer, researchers tracked the coffee consumption habits of 521,330 people in 10 European countries.

The results published in the scientific journal Annals of Internal Medicine, showed that coffee consumption was associated with a reduced risk of death for different causes and that this relationship did not change from one country to another.

Coffee is ultimately good for your health?
Currently, science is blatantly proving that drinking coffee is incredibly healthy, however, with one exception!

A recent article in the scientific journal Annual Review of Nutrition describes a meta-analysis of 127 studies on the effects of coffee on human health. The meta-analysis, which was conducted at the University of Catania in Italy and without funding from beverage companies, classified randomized and observational studies according to their methodology and reliability, before collecting the results in a "super study".

This meta-analysis revealed evidence that coffee consumption is associated with a decreased risk of many common cancers, including breast, colon, endometrial and prostate cancers, with a risk reduction of 2 to 20 %, by type of cancer.

Coffee consumption has also been associated with reduced risk of cardiovascular disease by 5% and about 30% of type 2 diabetes and Parkinson's disease, in addition to a lower mortality rate.

It has been found that coffee contains natural antioxidants, molecules that reduce free radicals that damage cells and accelerate aging. Coffee also repairs DNA, reducing the risk of cancer cells.

Coffee is also a natural anti-inflammatory that provides a calm for the body so as not to react excessively to stress. Finally, coffee improves the efficiency of enzymes that regulate the metabolism of insulin and glucose, thus fighting Parkinson's and type 2 diabetes.

Anyone can consume coffee?
There is a group of people who should not consume coffee: pregnant women. The American College of Obstetricians and Gynecologists recommends that pregnant women limit their caffeine intake to less than 200 milligrams per day, which corresponds to about a cup of 325 milliliters of coffee. The reason is not any nuisance to the health of the pregnant woman, but the coffee slightly increases the risk of miscarriage.
