  • 650 g flank steak sliced ​​against the grain
  • 4 medium sized zucchini
  • 2 tablespoons olive oil
  • 4 cloves of garlic, minced
  • 2 tablespoons of butter
  • 1 lemon, juice and zest
  • 1/4 cup (60 mL) low sodium chicken broth
  • 1/4 cup chopped parsley
  • 1/4 teaspoon crushed red pepper flakes
  • Salt and pepper crushed fresh, to taste
  • The marinade of the steak
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup of lemon juice
  • 1/2 cup of olive oil
  • 1 teaspoon of hot sauce

The preparation :

1. Mix the marinade ingredients in an airtight container or vacuum plastic bag. Add the steak strips in the marinade, close and marinate in the refrigerator for 30 minutes to an hour.

2. Meanwhile, wash and cut the ends of the zucchini. Using a spiralizer, prepare zucchini noodles and set aside.

3. Return the steak to room temperature and heat the oil in a large skillet over medium-high heat. Reserve the juice of the marinade for later. Add the steak strips in one layer and season with salt and pepper. Cook for 3 minutes without stirring.

4. Add the minced garlic, then stir the steak for 2 to 3 minutes to cook the other side. Remove the steak from the pan and put on a plate.

5. In the same pan, add butter, lemon juice and zest, red pepper flakes, chicken broth and remaining marinade juice. Simmer for 2-3 minutes, stirring regularly.

6. Add the fresh parsley, add the zucchini noodles and mix for two to three minutes to cook. Let the juice cook for a minute or more depending on whether the zucchini produces too much water or not. Add the steak strips in the pan and stir for a minute. Serve immediately!
