Legendary cake with authentic flavors, this pastry is nevertheless very caloric. So, to avoid feeling guilty after the holidays, we offer you the recipe for a delicious log, without refined sugar or added fat!

This hazelnut chocolate log recipe is very low in calories, animal cream being replaced by almond cream and sugar refined with agave syrup. What give in to temptation without too much depriving you, and especially without fearing the scales the days after.

Flagship ingredient of a dream dessert: Chocolate!
A delicacy with many benefits, chocolate is undoubtedly the sin of many of us. Nevertheless, to take advantage of its many virtues, it is better to consume it black because containing more cocoa than milk chocolate or white chocolate. Thus, the more it has a high content of cocoa, the more it contains fiber, oxidants and flavonoids, true allies for our health.

Agave, to sweeten without ruining your health

Natural sweetener, agave syrup is derived from the extraction of cacti sap, agaves, which grow on the volcanic soils of southern Mexico. At very low glycemic index compared to white sugar, it is therefore a very good alternative that, used moderately, will not cause a blood sugar spike in your blood.

Chocolate hazelnut log recipe without refined sugar or added fat


For the biscuit
  • 60 grams of flour (30 grams of rice flour, 15 grams of buckwheat flour and 15 grams of corn flour)
  • 10 cl of vegetable milk
  • 4 eggs
  • 50 grams of agave syrup

For garnish
  • 90g of soy cream
  • 140g dark chocolate (60% cocoa)
  • For icing
  • 2 tablespoons (rounded) of hazelnut puree
  • 30g of soy cream
  • 60g dark chocolate (60% cocoa)


For garnish
Start by melting the almond cream in a saucepan over medium heat. As soon as it starts to boil, remove from the heat and add the chocolate in pieces. Mix everything so that the chocolate melts completely and set aside.

For the biscuit
  • Preheat your oven to 160 °.
  • Start by separating the whites and egg yolks and then whip the whites. In a bowl, keep 3 to 4 yellows.
  • Beat the egg yolks with the milk, cream, flour and agave syrup until you have a smooth paste and then gently add the whites with a spatula.
  • On a baking sheet, place a sheet of baking paper and pour all of your preparation, trying to form a rectangle.
  • Put in the oven for 15 minutes, then peel the sponge from the baking paper before it cools.

For assembly and frosting
  • Pour your filling on the sponge cake, then roll your log. Then put the fall under the log and place it in a mold so that it does not flatten. It will then be necessary to reserve in the refrigerator during at least 3 hours.
  • To prepare your icing, heat the almond cream in a saucepan over medium heat. Remove from heat as soon as it is hot and add chocolate in pieces. Melt it and mix everything together. Finally add the hazelnut puree to your device and let it sit at room temperature.
  • You can start your icing by placing the log on a rack (put food paper under your grill to avoid dirtying and do it several times). For a log effect gently pass a fork lengthwise.
  • Book again in the refrigerator for at least 2 hours.
