Generally shunned by our toddlers, cauliflower is a healthy food that can be declined in many forms. Indeed, thanks to the vegan trend and the constant desire for a more balanced diet, this vegetable is unveiled and used as a substitute for pizza dough or rice. In this sense, here is the recipe for fried rice version cauliflower and chicken.

Cauliflower is a source of essential nutrients: vitamins C, B and K, phosphorus, magnesium, calcium, antioxidants and fiber are among its components that improve our health. Moreover, here are its benefits for our organization.

The benefits of cauliflower

As Marie-Claire reveals in an article dedicated to the virtues of cauliflower, it is a vegetable with various positive effects on our health. It will boost the immune system, fight against excess cholesterol, preserve cardiovascular health, improve bone health and fight against the harmful effects of free radicals, unstable molecules responsible for early skin aging and some diseases. In addition, a study on the consumption of Brassicacaea type vegetables, and therefore cauliflower, has shown that such a diet favored the reduction of certain bacteria and improved gastrointestinal health. Another study also showed the anti-inflammatory and antioxidant properties of cauliflower, which reduces oxidative stress and inflammation. The recipe for chicken fried cauliflower rice

Ingredients:

- 1 slice of organic and GMO-free chicken breast
- 1 large cauliflower
- 2 eggs
- 2 carrots, thinly sliced
- 1 cup of edamame or beans
- 2 cloves of garlic, finely chopped
- 5 new onion stems, chopped
- 3 tablespoons soy sauce
- 1 tablespoon of peanut paste
- 1 teaspoon of chili paste
- 1 pinch of salt and pepper
- 1 lemon

Preparation:

- In a frying pan, heat a little sesame oil then add the chicken, previously seasoned with salt and pepper.

- Cook for about four minutes on low heat, turning and remove from heat. Cut the chicken into pieces and reserve for later.

- To prepare the cauliflower rice: grate the cauliflower and cook over medium heat until soft. You can add a little sesame oil.

- In another pan, cook carrots with soy sauce, peanut paste and chili paste. Add edamame, garlic and new onion and stir. Pour cauliflower rice and chicken and mix again.

- In the same pan, gently push the mixture aside and break the eggs in the empty part. You can prepare the fried or scrambled eggs to incorporate in the cauliflower rice.

- Arrange the fried cauliflower rice in bowls and decorate with a little chopped onion. Finally, season your dish with lemon juice to your taste!
