The Famous Recipe For Creamy Lemon Pasta

Conceived under several varieties to satisfy the culinary aspirations of everyone, pasta can be married with any type of food. In the starter or main course, in a vegetarian version or with meat, pasta can satisfy the desires and tastes of everyone.

In this article, we present you a creamy Italian pasta recipe made from mascarpone, lemon and vegetables.

Do pastas make you fat?
Pasta has the reputation of being a food that makes you fat. Fortunately, this false information was quickly swept away by scientists. Indeed, a study points out that pasta does not make you fat. The people subjected to this experiment were divided into two groups. The first did not follow a particular diet while the second followed a low glycemic index diet. The results show that the body mass index of the first group has not changed. As for the group on a low glycemic index diet, the experts noticed that the participants had lost weight significantly. We can therefore conclude that pasta can be integrated without worries in a slimming process.

Nutrients in pasta
As we all know, pasta is a very good source of complex carbohydrates. These starches have a low glycemic index and contain a moderate caloric load. In addition, they provide a source of vegetable protein and are slowly assimilated by the body. Rich in fiber, they generate a feeling of prolonged satiety and help to avoid unwanted snacking between meals.

They also contain B vitamins, phosphorus, magnesium, potassium and calcium.

Pasta is subject to very specific regulations. Indeed, they can not contain additives or dyes. Their composition is then limited to durum wheat semolina, water and salt. Pasta can however contain vegetables or eggs.

The recipe for pasta with lemon and green vegetables:

Ingredients (2 people)

For this recipe, you will need:

- 250 grams of orecchiette pasta
- 100 grams of chicken aiguillettes
- 2 teaspoons of organic olive oil
- 1 minced shallot
- 3 crushed garlic cloves
- 120 grams of mascarpone
- The zest of a lemon
- The juice of 2 lemons
- ½ teaspoon of salt
- A pinch of red pepper
- 2 cups of green chard without skin
- Some slices of lemon
- Parmesan cheese

Preparation:
- Bring a pan of salted water to a boil and cook pasta al dente.

- Meanwhile, put the chicken aiguillettes in a large pan with the olive oil. Make them come on low heat for 3 minutes.

- Then add the shallot and garlic and cook the mixture for another 3 to 4 minutes.

- When the pasta is cooked al dente, drain them and reserve in a saucepan the 1/4 of the cooking water.

- Add the mascarpone, zest and lemon juice, red pepper and salt in this saucepan. Brown the mixture over low heat.

- When the water is reduced and you get a creamy sauce, add the pasta and chard.

- If the sauce is too thick, add a few drops of cooking water until the texture is creamy.

- Before tasting, serve the preparation by adding parmesan and lemon slices to decorate.
