Ingredients of zucchini fritters
  • 1 big zucchini
  • 1 clove garlic, peeled and finely chopped
  • 1/4 cup fresh basil
  • 1/4 cup fresh oregano

  • 1/4 cup gluten-free flour
  • 1/4 teaspoon of onion powder

Preparation:

- Place the grated zucchini in a colander in the sink and mix with ½ teaspoon of salt. Let it drain for 10 minutes then squeeze the zucchini in a kitchen towel. In a bowl, add zucchini, eggs, garlic, basil, oregano, lemon peel, onion powder, salt and pepper. Mix everything together and add some flour little by little to avoid lumps.

- Heat 2 tablespoons of olive oil in a large skillet and place about 1 tbsp of the mixture each time. Repeat the operation by spreading the donuts a few centimeters. The cooking time of each face of donuts is 2 to 3 minutes. You can also bake them in a muffin tin.
