They must be eaten quickly, well covered and stored in a glass bottle in the refrigerator.

How to prepare almond milk at home?

Ingredients
  • 1 cup almonds (155 g)
  • 3 cups of water (750 ml)
  • 1 cinnamon stick (optional)
  • 1 teaspoon of vanilla essence (optional) (5 g)

Preparation
- Place the almonds in a deep bowl and cover them with plenty of water. You have to make sure that the water is sufficient because the almonds will swell.

- Let them soak all night.

- The next day, rinse the almonds well, and put them in the blender.

-  Add the 3 cups of water and mix everything until the almonds are reduced to powder.

- Filter the liquid to separate the milk from the almond remains and store it in a glass jar.

If you wish, you can add a stick of cinnamon or a little vanilla to perfume this milk.

After a few minutes, it is normal to notice that the almond and the water separate. You will only have to shake it before consuming it. You can eat it alone, but you can also use it to prepare recipes such as smoothies and juices, soups or desserts like this old-fashioned custard dessert.

The traditional recipe of the flan, without sugar and without milk

Ingredients
  • 50 cl of almond milk
  • 3 eggs
  • 5 teaspoons of agave syrup or 3 teaspoons of stevia
  • 1 vanilla pod of Madagascar

Preparation

- Start by preheating the oven to 180 degrees
- Put the almond milk in a saucepan and boil it.
- In a bowl, gently mix vanilla sugar, eggs and stevia.
- Add this mixture to warm almond milk and mix well.
- Pour the mixture into the ramekins and pat on the counter to eliminate the bubbles.
- Cook them in a bain-marie oven by putting the ramekins in a mold filled with water for 30 minutes. The blanks must have a golden color

Let cool before putting them in the refrigerator.

To serve, pass a sharp knife on the edges of the ramekins. Carefully turn the blanks over the serving platters.

Caution :
People who suffer from kidney stones should not consume almond milk in excessive amounts, given its high calcium oxalate content.
