  • 4 tablespoons lemon zest
  • 500 g ricotta cheese
Preparation
- For the base of the sugar-free cheesecake, start by mixing all the ingredients at the same time and then pour everything into a pre-buttered pie dish.

- Then place it in the refrigerator for 30 minutes.

For the filling of the cheesecake
- Boil 200 ml of water, pour it into a large bowl and add the gelatin powder. Mix until it is completely dissolved, then add the 200 ml of cold water.

- Add the cheese, lemon zest, fructose and lemon juice, then mix with an electric whisk until smooth, creamy and even.

- Take your base out of the fridge and pour in your mixture.

- Put your cheesecake back in the fridge for the night.
